Chef Spencer Richards has returned from the United States after taking part in a world barbecue event.

Mr Richards runs his Buffet Company business in Woodford Halse and flew out to Kansas City for the event on August 14 and 15. It attracted 68 teams altogether including one former world champon and two currently in the top five of the world rankings.

Not to be unfazed though, Mr Richards and his team started prep on the Thursday before getting to work on the Friday.

Their pasta dish, which involved recreating a bolognaise as a burger presented in a brioche bun, came third for a $100 prize. As well as being well placed in most categories, Mr Richards won another $250 in the chicken section.

He said: “Many of the teams mingle and talk making new friends and even swapping techniques. Our team of four took shifts through the night to top up the charcoal and maintain the right cooking temperature.

“For a rookie to the competition it was a great success and getting so well placed and received rosettes and money was fantastic. It was a fantastic experience and incredble fun!”
