Tributes are paid to Liz Jackson of Arlescote, '˜a true countrywoman', who died after a riding accident last week

Mrs Jackson, 65, died with her husband of 39 years, Simon, at her side on The Slade, a country lane between Fenny Compton and Farnborough.

After school at Downe House, Berkshire, Liz Fletcher learned secretarial skills but chose to specialise in cookery.

After moving to Warwickshire and meeting and marrying Simon Jackson she used her entrepreneurial skills to create Lizzie’s Basket, a company catering for directors’ lunches and other events.

She also used her needlework talent to make curtains, was a lifelong horse rider, keen bridge player, gardener and golfer - a true countrywoman.

With a son, Henry and daughter, Kizzy, she was first and foremost a dedicated mother and wife who encouraged everyone in her orbit to find the positive in any negative situation.

“She was a wonderful mother to me and Henry and a thoroughly devoted grandmother to Henry’s children, Archie and Oscar,” said Kizzy Jackson.

“She was always there for us and she went to great lengths to support the wider family. As Dad said, she would never let a telephone ring out and her door was always open for anyone.”

The family spent many happy holidays in Cornwall surrounded by family and friends.

“Mum and Dad enjoyed surfing and never failed to take to the sea in their wetsuits, clutching their old fashioned wooden boards,” said Ms Jackson.

Mrs Jackson was a stalwart supporter of her husband, canvassing enthusiastically when he stood to become Burton Dasset ward district councillor and more recently as his consort during his term as chairman of Stratford District Council.

“She attended every function with him and had the most wonderful ability to engage with anyone. They rode together almost every day, and The Slade, where the accident took place, was one of their favourite rides,” said Ms Jackson.

“Mum was active in the local community and regularly volunteered for Riding for the Disabled Association (RDA) near Stratford-upon-Avon, delivered meals on wheels in the Banbury area and more recently, campaigned to raise funds for the restoration of the Beauchamp Chapel at St. Mary’s Church, Warwick.

“She often attended St Michael’s Church in Warmington and assisted with flower arranging and cleaning.

“Mum was extremely upbeat, always looking on the sunny side of life. She would never give up when faced with a challenge. Everyone is extremely shocked and she will be greatly missed by family and friends.”

A service of thanksgiving and celebration will be held at St. Mary’s Church, Warwick, CV34 4RA on Friday, January 22 at 2:30pm. No flowers please but donations welcome via funeral directors Humphris on 01295 265464.
