Hook Norton Brewery has entered the world of fine dining with the appointment of a Michelin-starred head chef.
Matt Weedon will command the kitchen at The Fox, a traditional 16th century inn located in the centre of Chipping Norton’s historic market place.
Mr Weedon has been the recipient of multiple culinary accolades including earning Michelin stars at two of the restaurants he formerly ran.
Mr Weedon said: “I’m excited to be joining the team at The Fox and looking forward to driving the food and service forward using the very best of local, quality suppliers to produce a menu fitting for our location here in the Cotswolds.”
Mr Weedon plans an overhaul of the menu and has already put his unique stamp on the kitchen’s output by introducing a steak and Hooky Ale short crust pastry pie, arancini risotto balls and Old Hooky Beer bread with Marmite butter, all of which have been enthusiastically received by diners.
In addition to utilising the brewery’s range of beers and ales Mr Weedon will also create dishes with a strong emphasis on quality ingredients from local suppliers.
Hook Norton Brewery operations manager, Gerard Winder added: “We have always strived to offer high quality, honest, locally sourced food and with Matt now on board we can really drive this forward and up a level.”
He added: “We have exciting plans with new menus and more beer and food matching.”
