Brothers sideline degrees to open Brailes butcher’s shop

Every morning guests at Raymond Blanc’s exclusive hotel, La Manoir in Great Milton, wake up to a breakfast of delicious bacon and pork sausages.

The meat comes from a farm near Brailes. And the brothers who set up that farm, Nick and Jon Francis, have now opened a butcher’s shop in the village.

“We’re an unusual case as we’re not from a farming background so our ‘farming’ started through our love of good food.”

The shop sells all kinds of meat but top of list is pork and pork products from their hand-reared Tamworth pigs.

The brothers, both Masters degree graduates, sell their products to some of the country’s top hotels and restaurants. On Saturday there will be on Open Day with sausage making displays and pies and delicatessen products to sample. There will also be a colouring competition for children.

Nick Francis said: “We’re an unusual case as we’re not from a farming background so our ‘farming’ started through our love of good food.

“We bought a couple of Tamworth pigs and raised them at the bottom of the garden. Now, five years on, we supply hand-reared pork to top-class restaurants around the country. We’re selling local beef, lamb and poultry, deli items, cheeses and cooked meats.”
